I'd suggest one switch for each wiper.  You could do it with a
multi-position switch, but it would (I think) need an 8 position
switch, and would be very confusing to operate.

I'm guessing that the wiper motors are self-parking.  If so, probably
the +12 should get a permanent +12V, while the switched power goes to
the "S" terminal (or possibly vice-versa).  Is there any documentation
on the motors - that should tell you how they should be connected.
