How about the connectors used for boat trailer lights. For small amperage pumps the 'flat four' connectors could be wired in with a standard wiring for the ground, float switch and manual on connectors, allowing easy change-outs. These are designed to work in pretty harsh conditions, and if further corrosion resistance were needed I would suggest applying a dab of corrosion block with a Q-tip to the male metal contacts, wipe the outside of the assembled plug with a little solvent and then sealing the plug join with electrical tape. If higher amperages are required, there are the big trailer connectors (needed with electric trailer brakes). Considerably more expensive but perfectly functional two pole connectors are the models used for trolling motors.
Because bilge pumps are such high priority safety equipment you should consider securing any plug in the electric service with a nice snug tie wrap so they could never shake apart.
