Sorry for the lateness of my reply. I just found this in my "drafts" file.

If distilled or de-ionized water is stored in sealed containers what sort
of contaminants are you worried about? And, where are they likely to come
from? Water is a pretty simple molecule and about as stable as any.

To continue the thread, we've been drinking water from Sadie B's tank
directly for 12 years, filled with whatever city-type water we could find,
filling the tank following a simple "Sniff and taste test from the hose".
But, earlier we lived in a farm house in Vermont with a spring water source
12 feet deep and 8 feet across, covered with an A frame roof. During dry
periods we supplemented that water with rain water caught in a cistern from
the rain falling on the roof. 

In 25 years of living there and entertaining frequently, I never heard a
report of anyone being sick from a meal at our home. My opinion of the
present craze of bottled water and filters is that it is a combination of a
national paranoia, and fear of the unknown, combined with a feeling that,
if it's in a nice designer  bottle with "Green sounding" name,  (even
better if shipped from a foreign country) it's better than what comes out
of the tap. Most unbiased test reveal otherwise.

But, personal experience does agree that bourbon mixed with RO water from a
watermaker does have a somewhat different taste. Answer, add more bourbon!
