We cruised for over 20 years with a tankless hot water heater. In my
opinion, they're the greatest thing in cruising since canned beer and I
can't understand why more boats don't use them. Ours was a Paloma
(unfortunately, Paloma no longer bothers with marine certification but I'd
use one anyway). I know there are others available. Ours was propane and I
used to tell people that we had an 80 gallon hot water tank since it heated
the water AS you used it and we had 80 gallons of water aboard. You could
control the outgoing temperature of the water with a restrictor knob (less
flow = more heat; not really a thermostat).
