Ship's Log nautical software will do this. It will take position, course,
and speed input from your GPS at intervals you specify and create those
entries in the log. Then you can add whatever other info you like. It also
has a ton of other features, like inventory, fuel, maintenance, etc. logs.
All logs can be printed out if desired.
