Since you have hydraulic steering, one important point to check is to make sure
you've got no air in the hydraulic system. Having air in the system can lead to
some of the symptoms you are reporting.
One fast check you can do is to have someone watch the rudder cylinder while you
move the wheel. The smallest movement of the wheel should give an instant small
movement of the cylinder arm. Any delay (i.e., it takes additional movement of
the wheel before the cylinder arm starts to move) is an indication of air in the
system. This could explain some of your symptoms.
If this is the case, a simple bleed of the system to purge the air can make a
huge difference in how the boat steers, both by hand as well as under AP
control.
