T&T: Filling pockets behind stringers in older trawler

Hi all,

I'm refurbishing an old 1970 Eagle trawler - and one of the things
I'd like to do is "fill" some pockets behind lateral stringers in the aft
bilge / crawlspace. Doing this would prevent small puddles of rain water or
other bilge water from collecting and stagnating in these hard to reach
pockets (and increasing the humidity of this area all summer, and messing up
my new paintjob!). I'm looking for a material that I could pour or spread into
these pockets that would be waterproof and allow the water to run down to the
centerline to be pumped out. I'm guessing I would need about 10 to 20 gallons
to fill everything properly. I'm a do-it-yourselfer, and am open to any ideas.
I'm considering a poured foam trimmed to level, and then spreading / building
an epoxy "cap" over the filler foam... (It will not have to support any
weight, just keep water from puddling). 

Any ideas / lessons-learned would
be greatly appreciated!

I've got at least seven hundred more projects with
this old boat, and many more questions... :)
