Bruce,
The size of holding tank needed depends mostly on where and how you cruise,
and you haven't stated that.  If you use the boat mostly for weekends and
keep it in a marina, that's one thing.  Full-time liveaboard cruising in the
U.S. is quite another.  We have a 40 gallon holding tank, which lasts us
10-14 days between pumpouts (two people, careful use).

In the Bahamas and many other foreign cruising grounds, there are NO
pump-outs. The holding tank is used to hold effluent until the next trip out
into deep water, where you must have the ability to pump it overboard
yourself.  Many cruising boats do not have this capability, and must pump
the head directly overboard in the harbors.  Best not to swim  in the
morning where there are many boats anchored.
