I probably would go for the holding plate system now.  You can get dual coil
plates, (or build dual coil plates)--Dole plates are galvanized and commerical
units, so they are rugged and relitaively in expensive.  You can get an
appropiate sized 110 V compressor (probably 1/2 Hp will be enough considering
the size) and run it off a pure sine wave inverter later.  The valves and
tubing are relitatively inexpensive.

With the refigerator,you will have it cycling on and off, the holding plates
just once or twice a day, set a timer to start, and thermostat for off.  Also
the evapator may not get cold enough to be a good freezer.  The flow over
system is not all that good (I have used it on one of my systems I built--I
used a flapper valve with a thermostat, and a very small fan.)  Separate
plates, with specific temps are better.  Also with top loading boxes, there is
the problem of freezing the bottom of the refer box, so you do want a
circulating fan in the box, with some gratings allowing circulation.
