[Sentoa] questions about window coverings

We are wishing we had something to cover the side pilot-house windows of
Invictus when we need shade and/or privacy. The previous owners had some
plastic frameless screens made up that stick on with Velcro but the Velcro
looks kind of messy when the screens are not up. We tried smaller Velcro
dots but they don't hold the screens and it looks like the boat has
smallpox. Does anyone have any great solutions? We've seen a boat or two
that look like they have some kind of blinds but we've only seen them from
the outside and don't know what they were.. (We do have sunbrella covers for
the outside but those are not practical when we are using the boat.)
The other question we have involves the various under-counter cupboards. The
big one under the galley sink is one example. Have any of you built shelves
or added pre-built shelves that make this space easier to use?
