About the only source are the ones from USACE  (Army Corp Engineers),  they 
also have the printed ones.  Suggest you get on line and look as they  are not 
what you are used to...they have a magenta line but no  depths.   Do be aware 
that in several areas of several rivers they  have underwater dams to channel 
the water flow to the middle.
 
Very few people actually do the Mississippi.  Although there may be a  decent 
trip from the OH/MS junction down to the Arkansas and then into Oklahoma,  or 
go north from that juncture and go to Minneapolis, MN.
 
Printed material ...as in books....I am sure that a lot of folks will  advise 
you accordingly.
Have fun, the planning is a good portion of that.
