Rob,
I can't tell you about the lower Mississippi but I can point to a couple of
sites.
Last year I built a small section my website concerning travel on the
'normal' Loop section of the Mississippi (Illinois to Ohio rivers) and this
year added an Addendum that pointed to websites I have found useful.

Go to the bottom of the this page and then the bottom of the Depth and
Currents page. It primarily talks about Cape Girardeau as an indicator for
that section but has some other references. If you look at their Rivers &
Reservors site you will see FULL rivers right now!
The best starting place I have explored for your purposes is
www.RiverGages.com
As it turns out, we should be in your area in about 3 weeks or so. We plan
to 'splash' Letitia in the next couple of days and start up the Michigan
coast next week.
I had planned on checking into Canada at Thessalon (altho Hilton Beach or
Bruce Mills are also on my list).
