Not a good idea -  I believe in Florida that could constitute criminal check
fraud and possibly worse if you put the second check in the U.S. mail.  You
probably still would have a mechanic's lien on your boat for the balance
until the issue is resolved.

This probably will turn out that it is an expensive life lesson - it's a lot
of money, but not worth getting sued or worse.

When it seems clearly like a scam, I had to do this once. Wrote a check,
got 
in the water and left, stopped payment on the check, wrote a new one for 10%

over the estimate. End of that story. You may need to consider if there is 
some  legitimate reason for the extra charges. If so, include that in the 
replacement  check. Just because they PO'd you, don't play the same game.
