I would not use one engine with the other one turned off because the prop
will turn any way while underway, potentially damaging the trasmission, i.e.,
the engine needs to be on to move the transmission fluid. Some
boats have an override for this, but not many. The shaft can be tied down
so it will not turn (difficult to do), but what happens if you need that
engine
immediately. If the second engine is in neutral with the engine on, then the
transmission would be protected.
