GL: mattresses & cushions question

Good afternoon:  We want to re-do our V berth mattresses and also the cushions
in the aft cabin that serve as a pull-out double bed.  Vendors referrals in
the SE US especially appreciated; I know we may need to look outside this
territory.
We may need cushions rather than mattresses in the V berth, and could use the
current mattresses as a template for a cut-down version, maybe of high tech
foam (current mattresses are 7", which makes head-clonking too easy).
Recommendations of types of foam that provide good support without huge space
requirements appreciated.
